It’s Barbecue Season. Let’s share some recipes – food or drink – that make outdoor eating fun!

The best part of cooking out on the grill is that my husband loves to do it. Of course, I have to plan, buy and prep the food, but then I can settle back while he cooks it. Nice!

One of my favorite (and simplest) dinners is marinated flank steak, corn and zucchini.

I believe flank steak is underrated and it can be tough, so the secret is to marinate it before grilling.

Here’s the recipe…

Marinate a flank steak in any Italian dressing and store in the refrigerator for 48 hours.

When it’s time to prepare dinner, husk the corn, put several pats of butter on each ear and wrap in tin foil.

Wash and slice zucchini into thick strips. Drizzle with olive oil and pepper.

Light the fire and let it settle down to glowing coals. Arrange the food in a circle on the grill as follows:

Corn on the outside, zucchini next and the flank steak in the middle. Discard the marinade.

Cook until the steak is done to your liking. (Medium rare is best).

Remove everything from grill and keep vegetables warm in the oven while you slice the steak. Slice it thin and against the grain.

Pour your favorite libation and … yummy!

P.S. Leftovers make great fajitas if you add some peppers.

  1. I’ve always been afraid to cook flank steak. Not sure why, lol. Worried it might come out too dry, perhaps. I’ll definitely try this!
